Pit pop-up | De Pommerie x Fabrieck

I have mixed feelings about pop-up restaurants. On one hand, I think the idea of a restaurant being temporary is exciting and it makes me want to go there. But on the other hand, if it's great, I'm sad that it's only there for a limited time. That's the case with Pit, a pop-up restaurant I tried earlier this week. It's only there for four more weeks so I wanted to tell you about it before it's too late because the food is in-credible!

Pit is located in an old Art Deco factory called Fabrieck in Sint-Niklaas, a town where I don't come very often, but for this restaurant, I'd gladly make an exception. The pop-up is the brainchild of Karolien and Yannic, a couple who runs catering company De Pommerie. I've had Karolien's food quite often at private dinners, and I can say that her food is some of the best food I've had in Belgium, and definitely better than any other caterer I know. So I knew I'd love the food at Pit as well.

The location, Fabrieck, is a very bright and cozy space. The kitchen is in the back so you can see Karolien cooking with both Yannic and her sister Astrid helping out. A real team effort, which adds a nice family-vibe!

The menu is fixed but changes weekly. You get a mix of different dishes to share with your table partners, for €25 per person. Dessert and drinks are not included and optional. We started with a delicious ginger mocktail.

First up, the appetizers: some kind of avocado dip, a little celeriac soup, focaccia, Belgian endives for dipping.

Because my sister and I don't eat meat or fish (which is usually included in the menu), we got a slightly adapted version of the menu. For today, we decided to eat vegetarian instead of vegan, because of the fixed menu. Our starter consisted of these three beautiful dishes:

Stuffed portobello mushrooms with ricotta and grains. This was my sister's favorite dish!

Burrata with avocado and tomato.

Raw vegetable 'lasagna' made from root vegetables. This was my favorite, so so so tasty and beautiful!

Isn't this the most beautiful spread of dishes you've ever seen? I love when the food is presented in such an appealing way and also tastes incredible.

Pearl couscous with pumpkin.

Spaghetti squash with mushrooms. I think this is my new favorite fall vegetable, it's versatile and Karolien prepares it so well! 


As you can tell you get a lot of food! And we didn't even get the meat or fish dishes, so you should definitely come hungry :) 

We decided to share a dessert, which was a white chocolate exotic fruit dream. So good! I usually don't like having dessert in restaurants because 9 out of 10 times they're disappointing. But not this time!

To polish off this delicious long lunch I had an espresso and some caramelized popcorn (this one is addictive, thank god it was only a small bowl).

I can highly recommend paying a visit to Pit before it closes on December 8th. It's open for lunch from Tuesday until Friday and you have to make a reservation because there are only a limited amount of places. I hope this isn't a one-time thing, I'm expecting more pop-ups from Karolien and Yannic the coming years!
