First of all, I wanted to wish you all a merry Christmas! I hope you're having a lovely couple of days filled with good food, laughter, games, Christmas films, and above all, quality time with your family and loved ones. Last night, on Christmas eve, my mum cooked a delicious meal which we enjoyed with the family at home.Today on Christmas day, I took care of dinner. I decided to make a full plant-based Christmas dinner like last year. The perfect thing to have if you want to take a little break from those heavy meals one usually eats around Christmas time. This meal had all the delicious flavours you could wish for, without the food coma.
- Kale and spinach salad with pomegranate and a creamy dressing (cashew, lemon, tahini, maple syrup, garlic)
- Portobello steaks with chimichurri, based on this recipe
- Oven-roasted spiced cauliflower, partly based on this recipe
- Pan fried thick-cut celeriac (so simple but so good)
- Red pepper & tomato sauce (homemade, no recipe, just winged it!
I kind of made this meal without a plan, just a couple of recipes I'd been wanting to try! If you want a tasty vegan meal you should have 4-5 different things on your plate to keep it interesting! My family loved it :)
