Vegan banana pancake stack

Although I often make banana pancakes on Sundays, I realised I never posted my updated recipe. I posted a delicious protein banana pancake recipe in 2014, but as you may know I've reduced my intake of animal products some time ago, so I've taken the eggs and milk out of the recipe so that it's all vegan now. I love a good stack of maple syrup-covered pancakes on a lazy Sunday!

What you'll need (1 stack, 1 person):
- 1 ripe banana
- 1/2 cup of spelt flour
- 1 teaspoon of crushed flax seeds
- 3/4 cup of milk (I use Oatly)
- Optional: cinnamon
- 1 teaspoon of coconut oil

How to make it
Put all the ingredients in a blender except for the coconut oil and blend until you have a smooth batter. If it seems too thick, add some more milk. If it's too runny, add some more flour. I always do it by feeling, after making this a couple of time you'll know exactly which consistency works best. 

Next, melt some coconut oil in a large pan on medium heat. Pour 4 to 5 small rounds of batter, flip after a few minutes, put the pancakes aside and repeat the process until you've used all the batter (you usually need two rounds). Stack up the pancakes on a plate, add some fruit if you like - I added 1/2 banana and frozen raspberry pieces - and pour some maple syrup on top. Now enjoy your lovely vegan breakfast :)
