Easy vegan parmesan cheese

If there's one thing which is hard to replace when trying to eat vegan, it's cheese. When I say I eat vegan 90% of the time, the non-vegan 10% is cheese. Pretty much ;) On pizza, in a toastie, on a panini, on my pasta... Although I stay away from meat, butter, yoghurt, milk, fish etc., cheese is my guilty pleasure. There are alternatives but I haven't come across anything which comes close to a creamy burrata or salty mature cheddar. I'll keep looking! In the meantime, I've found a pretty great alternative to grated parmesan cheese, using 4 ingredients only. It's really super simple to make and you can sprinkle it on anything; from pasta to avocado toast!

The secret ingredient of this 'cheese' is nutritional yeast. Like I explained in my vegan mac & cheese recipe, nutritional yeast is an inactive yeast which has a kind of cheesy flavour. Together with cashews, it makes the perfect base for vegan parmesan. 

What you'll need 

1/2 cup plain cashews (unroasted, unsalted)
4 teaspoons nutritional yeast (found in health stores, I use this one)
1/4 teaspoon garlic powder
A big pinch of salt

How to make it
Blitz all the ingredients together in a food processor until it has a crumbly parmesan-like texture. Keep in a jar or airtight container in the fridge. It will last for several weeks!
