Crispy grilled little gems

This might not be anything new to you, but you also might be like "crispy gems.. whaaat?" Let me explain, it's basically a way to turn your slightly boring lettuce into something a little more exciting. It's the perfect side dish for any lazy summer lunch or barbecue. Little gem lettuce (also called Baby Gem) is like a miniature version of romaine lettuce. The leaves are densely packed together which makes them very crunchy. You could use the leaves as a taco replacement, but today's recipe is even more simple!

What you'll need
- One little gem per person (if they are larger, do 1/2)
- Any oil you like: olive oil, avocado oil, coconut oil...
- Sea salt & black pepper
- Fresh lemon juice 

How to make it
Cut the little gems in half. If they are a little larger, like mine, quarter them. Now there are two ways to make them: in a (grilling) pan or on the barbecue if the weather/season allows it! 

Pan: Place a pan on medium-high heat and pour in a little bit of oil. When the oil is hot, place the gems facing down in the pan, and let it sizzle for a minute or two. Turn over to the other side(s) for 30 more seconds, depending on how hot your pan is. Don't let the lettuce go all soft, you still want it to be fresh and crunchy on the inside, and just a little bit charred on the outside. The little gems might fall apart a bit, bit that doesn't matter so much, just be extra careful when turning them. 

Barbecue: After cutting the little gems, brush them with a bit of oil and place them on the barbecue (high heat). Char them for a couple of minutes, not too long. Take off the barbecue when all sides are a little charred.

Finally, add a sprinkle of sea salt, some black pepper and a squeeze of fresh lemon juice. Serve them in a bowl as a side dish. Amazing with barbecues or maybe as a simple lunch with some feta cheese and mint sprinkled on top?

I guess you can hardly call this a recipe, but if you haven't tried making this before it's a fun little thing to try this summer. I 'discovered' this last summer and I haven't stopped making it since. It's so simple but at the same time a really different way to prepare/eat lettuce!
