Sunday brunch | vegan spelt crêpes with coconut whip

Breakfast is by far my favourite meal of the day, and I love making a little extra effort during the weekend. Today I'm sharing a recipe which I've been making quite often recently. It's 100% vegan and 100% delicious. I kind of tried to healthify my regular crêpe recipe by using spelt and oat flour instead of plain white flour. And instead of butter and whipped cream, I used coconut oil and coconut whipped cream to make it vegan-proof. Even yummier than the original if you ask me! Sunday isn't complete without a big beautiful stack of crêpes, so put on your apron and let's get flippin'

What you'll need for a small stack
- 1 cup of spelt flour
- 1/2 cup of oat flour (blend dry oats in your kitchen machine until it's flour)
- 2 cups of oat milk, or any other milk you prefer
- 1 sachet of vanilla sugar (8 grams)
- a pinch of salt
- 1 teaspoon of baking soda
- coconut oil for frying
- optional: 2 teaspoons of flax seeds, 1 teaspoon of cinnamon

As you've noticed in my baking recipes, I like to use cup measurements because I personally think it's the quickest and most convenient method of measuring stuff while cooking. If you don't have real "cups" for measuring at home, you should definitely get some! It will make cooking and following (American) recipes much easier. If you don't have cups, you can find all conversions to grams here

Whisk all the dry and wet ingredients together with an electric whisk (or a strong arm) until you've got a runny and smooth pancake batter. Place a small pan with some coconut oil on medium heat, and pour some batter in it once it's hot. Don't use too much batter because you want the crêpes to be thin and crispy around the edges. Flip once the top side is no longer "wet" and leave it for another minute. We want bronzed and crispy crêpes :) Repeat the process for every crêpe until you run out of batter (don't forget to use a little coconut oil each time)

You should be left with a stack like this now:

To make the coconut whipped cream, you only need two ingredients: a can of coconut milk which has been in the fridge overnight, and a fresh vanilla pod (or Bourbon vanilla in a sachet).

If you leave coconut milk in the fridge, the creamy part separates from the milky part, which means you can scoop the solid cream out like pictured below. Take a few spoonfuls and whip it with an electric whisk for a minute while adding some vanilla seeds. Your easy coconut whipped cream is ready now! It's a pretty good alternative to regular whipped cream, especially if you're a coconut lover!

Now take your stack of crepes and spoon some of the whipped cream on top, together with fresh/frozen berries, maple syrup and some coconut flakes. You can pick any toppings you want. Banana and peanut butter is also a dreamy combination! Beware that the coconut whip melts a bit on the hot crêpes like regular whipped cream does, but it tastes just as good ;)
