Simple tofu scrambled "eggs"

Although I don't miss eating meat or fish during my veganuary challenge, I do miss eggs a bit. Eggs are super versatile and make the perfect quick brunch/lunch in the shape of scrambled eggs, omelettes or banana pancakes. We used to have chickens so we always had fresh stress-free eggs, so I feel like after January I want to buy eggs from a proper farm or something like that! But for this vegan month, I was looking for a good alternative for scrambled eggs so I found some recipes online for scrambled tofu, which actually has quite a similar texture! I'm really pleased with this lunch idea and I've made it a few times now so I wanted to share this easy + nutritious lunch recipe with you.

What you'll need (for 2 people)
- 200 grams of tofu
- 1 big onion or 2 smalls ones
- A handful of cherry tomatoes, cut in half
- Olive oil or avocado oil
- 1 avocado
- 2 big handfuls of fresh spinach 
- Herbs and spices: pepper, salt, smoked paprika, cumin
- Some slices of toasted rye bread or sourdough bread 

How to make it Start by chopping the onion as you like (I like half rings), and put it in a pan on medium/low heat with enough oil to cover the onions. Once the onion has softened, add the tomatoes and lower the heat so the onions and tomatoes can kind of simmer together for about 5 minutes (or longer if you have time!). Then, use a spatula to move the onion-tomato mixture to the side. Now take the tofu, break in smaller pieces and add to the pan. Use the spatula to break it into smaller pieces if necessary, then sprinkle with some oil and spices. Let this fry for about 5 minutes. Move to the side (like in the picture below) and cook a few handfuls of spinach until it has softened - add more if it's not enough. When everything is done it should look a little something like this:

Now toast some rye bread (you can also already do this during the cooking process) and slice up an avocado. I like to start with one slice of rye bread and layer it with spinach, tomato/onion, and tofu scramble. Put the avocado slices on the side and sprinkle with some hemp and sesame seeds.

I love this lunch because it's both very filling and a nutritious. You've got the protein from tofu (12gr of protein/100gr), healthy fats from avocado, vitamins from the vegetables and fiber from rye bread. A super lunch! Of course it's not the same as a real scramble, but it's a perfect vegan-proof alternative. And because of all the different flavours, you hardly notice you're not eating real eggs.
