Blueberry nicecream & green juice breakfast

The weekend is finally here again so I thought I'd share one of my favourite vegan brekkies. I must admit, on most days I just eat toast with homemade vegan chocolate spread and peanut butter, but then on SOME days I crave something super fruity so that's when I make this blueberry nicecream. Doesn't it look super tropical? You might think that it's better to make a cold breakfast like this in summer, but trust me this will give you some much-needed tropical vibes AND a big vitamin boost. The green juice on the side is there so you already have some veggies before your day has properly started. It's a winner brekky!

I made the green juice the night before because the last thing I want to do on a lazy Sunday morning is to get my juicer out, juice for 20 min and then wash all the parts. No way. So I make them in advance. The juices I make with my Versapers stay fresh up to 72 hours, so I like to make some juices on a Friday night so I can enjoy them all weekend. 

What you need for two glasses of juice
- 2 green apples
- 1/2 cucumber
- 5 hands of chopped kale
- small piece of ginger
- some mint leaves

Cut the fruit and vegetables if necessary (depends on your juicer) and juice everything together! You can add as much ginger as you like; I know it's a love or hate thing so you can add very little or even leave it out. I like this juice best when it's served cold.

In the morning, I prefer a semi-sweet fresh vegetable juice, and this one is perfect because the cucumber and mint make it super fresh, and the apple adds a hint of sweetness. The ginger gives it the necessary kick you need to REALLY wake up. One of my fave juices!

And now for the main act: blueberry nicecream. Only requires three ingredients and hardly takes any time to make!

What you need for one bowl of nicecream
- 1 frozen banana (cut into chunks)
- a big handful of blueberries 
- a small dash of "milk" (use any milk you like, I usually use cashew milk or coconut milk)
- toppings: passionfruit, banana slices, muesli, coconut chips, nut butter... go wild ;) 

Blend the frozen fruit with a strong blender, and add a little bit of milk to make the blending easier. Don't overdo it though, you still want a firm icecream-like texture. Blend until it's very smooth. You can also add some açaí powder/puree at this point if you want to make an açaí bowl. Scoop it into a bowl and then add your toppings. I like to keep it tropical so passionfruit and banana are perfect! Mango and kiwi would be pretty great too:)

This happy brekky will definitely wake you up.. and if not, just go back to bed to snooze for a little longer, you're definitely not the only one ;)
