Festive winter granola

So it had been a while since I had made granola, until my sister insisted I'd make some for her last week. And now I'm hooked again! Homemade granola is easy to make and the perfect addition to yoghurt (Turkish yoghurt is my favourite at the moment), a smoothie bowl or just with a bit of milk. This morning I decided to give a little festive twist to my granola, after all, it's only 40 days till Christmas!

I kind of just used the things I could find in the kitchen, so feel free to change up the ingredients. I could have also added almonds, dried apple, dates, pistachios, dark chocolate flakes or walnuts - the options are endless. You can also get inspired by the MyMuesli mueslis, super tasty but much less affordable than homemade granola. The recipe below is my take on Christmas granola!

What you need
- 4 cups of oats (I used old fashioned rolled oats)
- chopped pecan nuts
- chopped hazelnuts
- sliced almonds
- flax seed
- dried cranberries
- goji berries
- chia seeds
- cacao nibs
- 3 teaspoons of melted coconut oil
- 2 teaspoons of honey or agave syrup
- cookie spices (speculaas kruiden) or cinnamon

Preheat the oven to 180 degrees Celsius. Spread out the oats on a baking sheet in a baking tin.

Chop up the nuts or blitz in a food processor (the lazy but efficient way). Add two handfuls of nuts and add small handfuls of the other ingredients, depending on your preferences. Do not yet add the cranberries, goji berries and cacao nibs, those don't do too well in the oven, so keep those on the side. Sprinkle the granola mix with cookie spices, honey and coconut oil, mix it all up and then it's ready for the oven. Leave it in for about 20 to 30 minutes, depending on your oven. When the nuts are bronzed your granola is ready.

Leave the granola to cool before adding the cranberries, goji berries and cacao nibs. Then place it in a nice bowl if you're serving it up for breakfast, or keep it in an airtight container to enjoy the whole week (if it lasts that long).
