Super fruity breakfast bowl (recipe)

Now that warmer days are ahead of us, it's time to switch that breakfast porridge to something more refreshing, colourful and fruity. I LOVE that the berry season has started again. Strawberries, raspberries, blueberries... who doesn't love them? This week I decided to put a little more effort into my brekkie and came up with this super fruity breakfast bowl!

Berry 'sorbet' (or whatever you like to call it)
- 1/2 can of coconut milk (make sure it's cold)
- 3 handfuls of frozen berries, I used raspberries and mixed berries
- 1 banana

Toppings (these are the ones I used but you can use anything you like)
- 1 kiwi
- 3 big strawberries
- handful of pomegranate
- chia seeds
- coconut flakes and chips  

Other great topping could be: mangos, Greek yoghurt, banana, blueberries, raspberries...

To make the "sorbet", blend the banana, berries and half a can of coconut milk. I keep the coconut milk in the fridge so that the 'water' and 'cream' separates. This will give your sorbet a firmer consistency. If you don't like coconut milk, you can always substitute with a dash of (almond)milk or some yoghurt! 

Cut up the fruits and arrange them on top of the sorbet. Enjoy in bed with your windows open and the sun on your face!
