Recipe: warm red quinoa and kale salad

When it's cold and rainy outside, I want to have something more comforting than a simple salad for lunch. I've found the perfect solution: a warm red quinoa salad with kale and halloumi. A steamy hot meal, which is quick, easy and healthy (my favourite combo as uoi may know by now)
Red quinoa has a certain crunch which makes the salad a little more interesting. I found it at Whole Foods but I think you might be able to find it at other speciality stores. Halloumi makes every salad better in my opinion but you can also substitute it for feta cheese which is just as good.

What you'll need (for 1 person)
- 3 handfuls of kale
- red quinoa (I used 1 egg cup to measure it)
- 1 shallot, thinly sliced
- a few slices of halloumi
- a small piece of butter
- a splash of olive oil
- pepper, salt & chili flakes

You can also add more vegetables. I've made it a few times with zucchini and carrots as well. Just experiment with it and find out your favourite combo (and let me know of course)

How to make it Start by cooking the quinoa according to the packaging. My mom taught me to drain the quinoa before it's fully cooked so it maintains its crunchiness. 

While you cook the quinoa, prepare the halloumi in a pan with a bit of butter. I like adding butter to it because it gives it a nice flavour, but you make prepare the halloumi however you prefer. I like frying the halloumi until it has a nice golden-brown colour. When it's ready, put it aside on a plate. Don't worry about it becoming chewy, as you'll be heating it up again.

Next, add a splash of olive oil to the pan, and fry the shallot. After a minute or two, add the kale. It will take a few minutes for the kale to soften up, then add the drained quinoa and halloumi. Finish with a sprinkle of salt, pepper and chili flakes and you're done! This also works perfect as a leftover so you can re-heat and enjoy it the next day (perfect as a packed lunch). It's also perfect as a starter or side to a larger meal. 

I really love this new 'discovery' as I never used to eat kale before, even though it has lots of health benefits (Google it!). Let me know if you'll try this out!
