Recipe: Halloumi, pesto & avocado sandwiches

This was one of my favourite meals while I was interning in London. After a long day at work, I didn't want to prepare anything too complicated, so these halloumi-pesto-avocado sandwiches became my go-to meal. I love halloumi a lot so I don't think I'll get bored of these any time soon!
In London I made these with small baguettes, but it also works perfectly with ciabatta. Or what about thick slices of toasted sourdough bread? 

What you'll need (for 2 people):
- 1 pack of Halloumi 
- some butter
- 1 ripe avocado
- 1 ciabatta bread or baguette 
- parsley pesto

For the parsley pesto:

- Large bunch of parsley
- one handful of basil leaves
- olive oil
- juice from 1 lemon
- 1 clove of garlic
- pinch of pepper and salt
- some chili flakes


First, pop the bread into the oven (medium-high heat).

The pesto is really simple to make. Put the parsley and basil leaves in the food processor together with the garlic, pepper, salt, chili flakes and lemon juice and process it. Add some olive oil to make it smoother. It doesn't need to be perfectly smooth. 


Next, place a pan on high heat. Cut the halloumi into small pieces. Add a piece of butter to the hot pan and wait until it turns golden brown. Quickly add the halloumi. Turn the halloumi around after about 1 min and keep a close eye on it while you peel and cut the avocado (this can be messy). 


Take the pan off the heat, remove the bread from the oven and cut into smaller pieces and halves. Spread some pesto on one half, some avocado on the other and add the halloumi on top. Place the 'lid' on top and you're done!


How about adding some rucola or sun-dried tomatoes? Make it however you like it best.
